Colomba is a traditional Italian Easter cake made with natural wheat sourdough, where the dough must mature for 2 days in a multi-phase process of natural leavening before being baked. The product we offer comes from the renowned artisan bakery 'Pasticeria Fraccaro' near Venice, and the tradition of baking cakes dates back to 1932. Also, since then, a renewed sourdough starter, 'Lievito Madre', has been used daily to leaven the dough, which, as easy to calculate, is already 90 years old! This is the bakery's biggest secret, which, combined with the skill of the pastry chefs, translates into multi-generational success and reputation.
Our 'Colomba con Crema al Pistachio' weighing 750g is baked in a traditional dove-shaped paper mold, allowing it to rise high and be incredibly fluffy. Additionally, the cake is hung upside down immediately after baking, so the characteristic cap does not collapse under its weight. It is filled with delicious pistachio cream and covered with dark chocolate, sprinkled with crushed fresh pistachios. It is moist, fluffy, and heavenly aromatic. The whole package is placed in an exclusive laminated cardboard bag, making it an elegant gift.
