Colomba is a traditional Italian Easter cake with natural wheat sourdough, where the dough has to mature for 2 days in a multi-phase process of natural rising before being baked. The product we offer comes from the renowned artisan bakery 'Pasticceria Fraccaro' near Venice, and the tradition of baking cakes dates back to 1932. Also, since then, a newly duplicated starter for dough rising, 'Lievito Madre,' has been used daily, which, as easy to calculate, is already 90 years old! This is the bakery's biggest secret, which, along with the skill of the pastry chefs, translates into multi-generational success and reputation.
Our offered Colomba Classico weighing 750g is baked in a traditional pigeon-shaped paper mold, allowing it to rise high and have an extraordinary fluffiness. Additionally, the dough, right after baking, is hung upside down to cool, ensuring that the characteristic cap doesn't sag under its weight and the large amount of candied fruits inside. It's moist and fluffy, and at the same time, heavenly scented. The whole is packed in an elegant cardboard box, making it an elegant gift.
